Buried deep in old revisions of the Wikipedia article for Would I Lie to You?, and the Wikipedia article for the list of episodes of Would I Lie to You?, are the recording dates for every episode except those in the first series, and one other day when I'm stuck for things to write about I'll probably stick them all up here.
Most of the time, WILTY? is recorded a while before broadcast -- ranging from Series 2 remaining on the shelf for seven months before broadcast, to Series 6 filming its final episode on 30 March 2012 and then beginning transmission just two weeks later on 13 April. But Series 7 is an odd one -- due to David Mitchell being in Turkey to shoot the short-lived comedy drama Ambassadors, it doesn't start in the same week as the return of Have I Got News for You as likely intended, but a few weeks in, and it's the only series that's still being filmed whilst it starts airing. So let's have a quick look at the order.

One week later on 24 May the Giedroyc/O'Leary/Dawson/Widdicombe episode is aired -- the fifth to be recorded. The remaining episodes then TX in this order (with no episode on 7 June due to The Voice UK having to air on Friday to try and get out of the way of Britain's Got Talent):

6. Millican/Richardson/Harewood/Mortimer (recorded eighth)

Now, given the G/O'L/D/W episode is recorded on 6 May and broadcast on the 24th, because of how far in advance television schedules are confirmed, there must have been a more or less immediate decision to bring it forward in the running order (there wasn't another episode originally scheduled for the 24th). And there's a reason why it might have been, which is this story. If you can navigate your way through LiveJournal, you can read this contemporary set report from an audience member, which reveals the moment that story concluded, the warm-up act immediately came on stage to swear the audience to secrecy until broadcast. So that seems likely to have been a factor in moving it up.
The sixth and eighth episodes are also switched around in order, although presumably by that point they were no longer editing episodes in the same week as they were going to be broadcast and had more freedom with the running order (especially due to the aforementioned week off); they may have just decided that the C/RJ/R/M recording was a particularly strong one and a good episode to show last.
